It's a matter of balance; each ingredient brings its own aromatic touch. Thai cuisine uses powerful ingredients: galangal, ginger, chili pepper, soy or fish sauce, shrimp paste, and lemongrass.
Cutting and seasoning play an essential role in preparing recipes. The goal is to enhance flavors by optimizing cooking. Vegetables and meats are cut into small pieces, thus preserving their crunch and all the nutrients and flavors of the food. Seasoning is the final touch to each dish: chili pepper for spice, coconut milk for sweetness, basil for a fresh note.
